Assorted local cold cuts with pinzini

Preparation method:
Place the flour on a work surface and make a well in the centre. Add the salt, oil and fresh cream and mix together well. Dissolve the brewer’s yeast in a little water and add to the mixture. Knead well and then leave for about 2 hours to prove. Roll out the dough until thin and then cut into 4cm squares and fry in boiling oil.
Serve hot with various cold cuts such as zia Ferrarese (a type of salami), Parma ham and farmhouse pancetta.
