Fricò (fried vegetables) with squacquerone cheese

Preparation method:
Wash the peppers, remove the seeds and dice. Peel the onion and slice finely. Cook the peppers and onion in a frying pan with a little oil over a medium heat.
Wash the courgettes and aubergines and dice. When the peppers are cooked halfway through, add the courgettes and cook, mixing often. When the courgettes are cooked halfway through, add the aubergines, thyme, oregano and basil. Season with salt and pepper and finish cooking.
Serve the fried vegetables piping hot accompanied by a small bowl of squacquerone (a local soft cheese), some chopped chives and piadina romagnola.
