The chef and owner, Danilo Bianchi, has been running the restaurant in the mediaeval village of Longiano since 1988, with his wife Teresa and the precious collaboration of his staff. The chef and owner, Danilo Bianchi, has been running the restaurant in the mediaeval village of Longiano since 1988, with his wife Teresa and the precious collaboration of his staff. It serves typical, local dishes that mainly focus on the use of quality meats and ingredients and seasonal products. The pasta for the first courses is handmade daily and served with seasonal ingredients for dishes that include tortelloni with Porcini mushrooms and extra-virgin olive oil, tagliatelle with bladder campion and crepes with truffles. The restaurant sources the best local meats from the butcher “Amici di Santarcangelo” and so serves excellent T-bone steaks, thinly-sliced beef with Fossa cheese, grilled pork loin with Porcini mushrooms, roast sucking pork-style rabbit with fresh artichokes and lamb saltimbocca with roast potatoes. Freshly-made each day, the desserts deserve a special mention and include tiramisu with brittle and Chantilly cream with meringue and chocolate. Customers should also try Fossa cheese, served with a traditional fruit syrup called savor and homemade quince jam. The restaurant also has a good selection of mainly local wines. <<<
