Maccheroncini with mantis shrimp

Preparation method:
Clean the mantis shrimps, removing the claws, mouth and all sharp parts. Then cut them in half or into three, depending on their size. Wash quickly under running water. In a frying pan, brown the garlic and fresh chilli pepper in some extra-virgin olive oil. Add the mantis shrimp and once golden, season and pour in the white wine. Allow to evaporate before adding the cherry tomatoes, cut in half. Cover and allow to cook. In the meantime, cook the egg maccheroncini, drain and toss in the mantis shrimp sauce. If necessary, add a ladleful of water from the pasta. Toss together well and serve with a drop of extra-virgin olive oil and a handful of chopped parsley.
