Ingredients and quantities

Quantities for 2 people:

Approx. 250g cold cuts

  • coppa
  • pork bresaola
  • salami seasoned with Cervia salt
  • cured ham (cured 24 months)
  • 2 slices toasted bread
  • 2 slices lard
  • seasoned Cervia salt
  • 1 small bowl pear and pine kernel jam
  • 1 small bowl saba

Approx. 250g cheese

  • Pecorino cheese ripened in grape skins
  • Pecorino cheese ripened in chestnut leaves
  • traditional Pecorino cheese
  • Fossa cheese
  • Squacquerone soft cheese

Platter of Mora Romagnola cold cuts and cheeses (mature, ripened and soft cheeses)

Preparation method:

Warm the slices of bread in the oven. When hot, place a slice of lard on each; this will melt with the heat. Season with salt. Prepare a platter of toasted bread, cold cuts and cheeses and accompany it with a small bowl of saba and a bowl of pear and pine kernel jam.
