Sardines marinated in vinegar and white onion

Preparation method:
Clean the sardines, removing the head, intestine and scales. Wash thoroughly under running water and dry using a cloth. In the meantime, heat the peanut oil in a saucepan and when it has reached a temperature of 170°C, toss the sardines in the flour and fry. Once cooked, drain and dry. Season with salt and pepper to taste. Clean the onions and cut into juliennes. Brown in a frying pan with the extra-virgin olive oil over a low heat. Season with salt and add the bay leaves. Once the onions have sweated down, add the white wine vinegar. When the liquid has evaporated, turn off the heat and allow the onions to cool. Place the sardines on a serving dish and top with the cooked onions. Serve with a drizzle of oil and a sprinkling of chopped parsley.
